Ultimate Chocolate Chip Walnut Cookies

Did someone say cookies ? Not Just cookies but Chocolate Chip Cookies ?  Well if I got your attention with that, then trust me this isn't much else to say other than - Try this recipe now and thank me later when you're smiling.

Chocolate Chip Cookies

Yield: Dozen

Ingredients Needed

  • ·         ½ Cup Sugar
  • ·         ¾ up Brown Sugar
  • ·         ½ Tsp Salt
  • ·         4 Oz Butter (Room Temperature)
  • ·         1 Egg
  • ·         1 Tsp Almond Essence
  • ·         1 ¼ Cups Flour
  • ·         ½ Tsp Baking Soda
  • ·         3 Oz of Chopped Walnuts or Macadamia Nuts
  • ·         8 Oz Dark Chocolate (Chopped up)

Method

Set Oven to 350 degrees Fahrenheit.

Place sugars into a medium mixing bowl with salt and butter and cream using a hand mixer or whisk until mixture is smooth.

Add the egg and almond extract and whisk until combined for about 3 minutes.

Add the flour and baking soda into a sifter and sift directly into the butter egg mixture. Fold this mixture in gently using a rubber spatula. Then gingerly add the chopped chocolate and nuts and continue folding in until evenly dispersed. Do not over mix.

Place this bowl into the chiller for an hour to stiffen up.

Cut a large piece of wax paper and lay it on your counter, empty the dough mix onto the paper and form a large and thick sausage like shape almost like a Swiss roll and form with the dough and roll it up.

Chill for additional 45 minutes then remove paper and cut into thick circle like rounds  and place onto a parchment paper-lined baking sheet, leaving at least 4 inches of space between cookies and 2 inches of space from the edges of the pan so that the cookies can spread evenly.

Bake for 12-15 minutes, or until the edges have started to barely brown. Cool completely, and enjoy !
