Pork Sausage, Egg & Potato Breakfast Hash

I Never met anyone who wasn't psyched about Breakfast on the whole, then again for those who are a bit boring; I got the perfect no hassle one pot easy breakfast dish for the family. Think about seared pork sausages, cripsy potatoes with bell peppers spices and eggs nestled amidst this great symphony of flavours. Good Morning !

Pork Bratwurst, Egg & Potato Hash

Yield: 4 Portions

Ingredients Needed

  • ·         6 Oz of Boiled Baby Potatoes (Halved)
  • ·         2 Tbsp of Vegetable Oil
  • ·         5 Pork Bratwurst, (½ Inch Slices)
  • ·         ½ Cup of Julienned Onions
  • ·         1 Tbsp of Chopped Garlic
  • ·         ¼ Cup of Medium Diced Sweet Peppers
  • ·         ½ Tbsp of Paprika
  • ·         ¼ tsp Chill Powder
  • ·         1 Tbsp of Fresh Chadon Beni or Cilantro
  • ·         Salt and Pepper to Taste
  • ·         4 Eggs
  • ·         2 Tbsp of Freshly Chopped Parsley

Method

 Preheat Oven to 350 Degrees Fahrenheit

Place a medium sauce pan over high heat. Add the oil followed by the slices of the bratwursts and sauté for 5 minutes until crispy. Place bratwursts in a bowl and set aside.

To the same pan add the onions and garlic and sauté for 3 minutes until aromatic then add the boiled potatoes.

Add the paprika, chili, Chadon Beni and season with salt and pepper. Stir to combine, cook for an additional 2 minutes then add the bell peppers and the bratwursts.

Make 4 little nests in the pot and crack an egg in each pocket.

Place pot into the oven and cook for 10 minutes until eggs are cooked and yolks are set slightly.

Remove from oven and garnish with freshly chopped parsley.
