Cinnamon Banana & Raisin Bread Pudding with Ice Cream

Bread Pudding
Yield: 8
Ingredients Needed
· 5 Cups of Bread, cubed
· 5 Oz Brown Sugar
· 5 Oz UHT Milk
· 5 Oz Heavy Cream
· 3 Egg Yolks
· 2 Whole Eggs
· ¼ Tsp of Chief Brand Nutmeg
· ½ Tsp of Chief Brand Cinnamon Powder
· 2 Tbsp of Chief Brand Vanilla Essence
· ½ Tsp of Orange Zest
· 4 Ripe Bananas, Small Cubed
· 1 Pint of Vanilla Ice Cream
Method
Preheat oven to 350 Degrees Fahrenheit .
In a medium mixing bowl, add all the ingredients, with the exception of the bread. Whisk this milk and egg solution to combine all the spices and flavoring properly.
Then add the cubed bread and toss to even coat the milk mixture with bread and ensure it soaks into it. In small ramekin bowls, grease with a little butter and then add a little banana pudding mixture. Fill up all the bowls and place in the oven for about 15 – 20 minutes or until cooked. To serve place a scoop of vanilla ice-cream atop the pudding and enjoy.
