Mango Bread
Why must bananas get all the spotlight ? When in season, mangoes prove to be so versatile when cleaned, flesh placed into the blender and pulverized into a puree. This can then be used in so many confectionaries like breads and even ice-cream. If you're a lover of banana bread then this mango bread just lets you know what you have been missing all your life. Mango Bread
Yield: 1 Loaf
Ingredients Needed
· 2 ¼ Cups of All Purpose Flour
· 2 Tsps Baking Powder
· 1 Tsp Baking Soda
· ¼ Tsp Cardamom Powder
· ½ Tsp Cinnamon Powder
· ¾ Cup Oil
· 1 ¼ Cups Brown Sugar
· 3 Eggs
· 1 Tsp Vanilla Extract
· 1 Cup Mango Puree
· ¼ Cup Of Chopped Walnuts
· 3 Tbsp of Chopped Cranberries
Method
Preheat Oven to 325 Degrees & Fahrenheit
Butter liberally a Bread Loaf Pan
In a medium mixing bowl, sift together all the dry ingredients; flour, baking powder, baking soda, cinnamon powder & cardamom powder. Mix to evenly combine.
In another mixing bowl, add the oil and sugar and beat for three minutes on high speed.
Add the eggs and vanilla extract. Continue beating for an additional minute.
Add the dry flour ingredients and with a rubber spatula, gently mix into the batter.
Add the mango puree, walnuts, cranberries and mix to combine.
Add batter to the buttered loaf pan and place in oven for 1 hour to bake.
When done, remove from oven and let cool before slicing.
