Five Grain Vegan / Gluten Free Palaeo / Keto Flat Bread

Ingredients Needed

  • ·         1/3 Cup Sesame Seeds
  • ·         1/3 Cup Chia Seeds
  • ·         1/3 Cup Sunflower Seeds
  • ·         1/3 Cup Pumpkin Seeds
  • ·         ½ Cup Flax Seeds
  • ·         1 Tsp Salt
  • ·         2 Cups of Water
  • ·         1 Tbsp Cornstarch
  • ·         2 Tbsp Oats

Method

Place the Sesame, Chia, Sunflower, Pumpkin, Flax Seeds and salt in a medium mixing bowl.

Mix well and add 1 Cup of water. Stir to ensure all seeds are mixed thoroughly.

Cover with a cloth and let Sit for two hours undisturbed.

Mix the remaining 1 cup of water with the corn starch and stir.

Place a shallow sauce pan over medium heat and add the soaked seeds together with the starch water mixture

Using a rubber spatula, stir and cook for 3 minutes until mixture thickens and starch is evenly distributed.

Remove from heat and empty the mixture into a bowl and chill in freezer for 20 minutes or 45 minutes in chiller.

Set oven to 300 degrees Fahrenheit and evenly place the cold seeds mixture on a silicone baking mat. Spread out as evenly as you can and thinly .

This recipe yields one large commercial baking sheet pan. You can use a piece of parchment paper to place on top the seeds and using a rolling pin you can roll it out as evenly and thinly as you desire. This would also be easier and prevent the rolling pin from getting dirty.

When rolled out to desired thinness, sprinkle the oats atop to create an oat studded finish.

Place in oven and bake for half hour.

Remove from oven and using a dull pizza cutter, you can cut the flat bread into square pieces to score then return to oven for another half hour.

After one hour, you would have a crispy light cracker to enjoy. Store in air tight container.
