Yogurt and Garam Massala Lamb

Ingredients Needed
· 2 ½ Lbs boneless lamb cubes
· 1 Tbsp Chief Brand Black Salt
· ¾ Tbsp of Chief Brand Black Pepper
· 2 ½ Tbsp Chief Brand Black Garam massala
· 1 Tbsp of Chief Brand Black Geera powder (Cumin)
· 1 Tsp grated ginger
· 2 Tbsp of Minced Pimentoes
· ½ Chopped Chives
· 3 Tbsp Fresh Parsley
· 3/4 cup natural Plain Yogurt
· 2 ½ tbsp Vegetable Oil
· 2 Tbsp crushed garlic
· 2 medium onions, (Julienned )
· ½ Cup tomato purée
· 1Tsp Fresh Thyme
· 1 Green Sweet Pepper (Julienned)
· 1 Stick of Chief Brand cinnamon
· 2 Chief Brand cardamom pods
Method
Season lamb cubes with salt and pepper. Then Add the Garam Massala, Geera, ginger, parsley, pimentos and chives. Mix to season and then add the yogurt and continue mixing. Allow to marinate for two hours.
Heat Vegetable oil in a heavy pot and stir fry the onions, garlic over a medium heat until they are slightly caramelized and aromatic. Add the tomato paste, fresh thyme, cardamom pods and cinnamon stick.
Place the lamb in the pot, stir fry for about three minutes until lamb is seared. Add about 1 cup of water.
Cover the pot, lower the heat and allow cooking for about 35 - 45 minutes until lamb is cooked tender. About ¾ Cup of water can be added to the pot if lamb is sticking.
Add fresh sweet peppers to lamb then remove from heat once cooked. Serve with a choice of rice, roti or even mashed sweet potatoes.
