Multigrain Gnocchi Dumplings with Pesto & Salmon
Italian Gnocchi proves to be a bit misunderstood as it both belongs to the category of dumpling and pasta. Nevertheless when paired up with yummy pesto and salmon, it clearly fits into the only category of being yummy and scrumptuous.

Multigrain Gnocchi Dumplings with Pesto & Salmon
Yield: 4 Portions
Ingredients Needed
- · 6 Oz of Boiled Mashed Potatoes
- · ½ Tsp Chief Brand Salt
- · ½ Tsp Chief Brand Smoked Paprika
- · 1 Egg Lightly Beaten
- · 2 Oz of Jinca Multigrain Bread Mix
- · 2 Oz of grated Parmesan Cheese
- · 3 Oz of Flaked Cooked Salmon or Chicken
- · 2 Oz of quartered cherry tomatoes.
- · 1 Cup of Prepared Basil Pesto
- · 2 Tbsp of Muesli (Toasted)
Method
Place a medium pot of water on the stove and bring to boil. Salt the water lightly.
Meanwhile, in a small shallow mixing bowl, add the mashed potatoes, salt, paprika, eggs and mix to combine. Add the Jinca Multigrain Bread Mix and mix into the dough until it is absorbed and becomes semi stiff.
Transfer dough to a work surface; knead briefly to combine. Divide the dough into 4 portions.
Roll each portion into a 1⁄2″-thick rope. Cut ropes into 1⁄2″-wide pieces.
Add potato gnocchi to the boiling water and cook until just tender, about 5 minutes. Using a slotted spoon, transfer gnocchi to a large bowl and toss with pesto until evenly coated, adding a couple spoonfuls of cooking water, if needed, to create a smooth sauce. Add the tomatoes, flaked Salmon atop the gnocchi and transfer to a pasta bowl. Sprinkle on grated parmesan on gnocchi and toasted muesli serve.
