Saltfish Accras
Accras are a favourite of mnay Trinidadian especially when made with the classic combination of Salted Fish and Herbs. A fritter of its kind, this is a Caribbean Staple whether in Trinidad, Barbados or up the islands. Enjoy.

Salted Fish Accras with Chief Brand Tamarind Sauce
Yield: 1 Dozen Pieces
Ingredients Needed
- 1 Cup Salted Cod, Boiled and flaked
- 1 Cup Flour
- 2 Tsp Chief Baking Powder
- ½ Tsp of Chief Brand Himalayan Pink Salt
- ½ Tsp of Chief Brand Ground Black Pepper
- ½ Tsp of Chief Brand Ground Geera ( Cumin )
- ¼ Tsp of Chief Brand Chili Powder
- 2 Tsp of Minced Garlic
- 2 Tsp of Minced Chives
- 1 Tbsp of Minced Chadon Beni
- 1 Tbsp of Minced Celery
- ½ Cup – ¾ Cup Water
- 2 Cups Vegetable Oil for Frying
- 1 Jar Chief Brand Tamarind Sauce
Method
Place prepared salted cod in to a mixing bowl and add all ingredients with the exception of the oil and tamarind sauce.
Whisk mixture until you get a semi thick batter, similar a thick pancake mixture. Let batter sit for about ten minutes to allow the flavors to mingle and for baking powder to activate further.
Meanwhile heat the oil in a shallow high sided frying pan to 325 degrees Fahrenheit.
With a tablespoon, scoop up batter and allow to gently fall into the hot oil to fry but don’t crowd the pan with too many accras as this will take down the heat of the oil and would not yield a crispy accra.
They would take approximately 45 seconds to a minute on each side and as they become buoyant and start to float they are ready to remove and place on some paper napkins to absorb excess oil.
Serve with Chief Brand Tamarind Sauce as the preferred dip of choice
